A CONVERSATION with a fellow shopper over which variety of sweet
potato to buy led me on a search for more information on this
sometimes puzzling vegetable.
Coincidentally, a new book, "The Science of Good Food" by David
Joachim and Andrew Schloss with A. Philip Handel, sent from their
publicist, arrived a few days later. The timing couldn't have been
better.
The authors immediately got me off to a great start by explaining
that regular white potatoes are tubers (underground stems), while
sweet potatoes are roots specifically related to the morning glory.
I liked the imagery of deep purple morning glories against a
background of bright orange sweet potato. So I kept reading.
