Baked Macaroni and Cheese
Serves 6
2 teaspoons salt
1 pound elbow macaroni
1/4 cup butter
4 tablespoons flour
1 teaspoon salt
2 cups milk
2 cups grated sharp cheese
1/2 cup bread crumbs
1/4 cup butter, melted
1. Preheat oven to 350 degrees. Butter a 2-quart casserole dish.
Bring 4 quarts water to a boil in a large pan and add the 2
teaspoons of salt and macaroni. Cook pasta for 10 minutes, or until
just tender. Do not overcook.
2. Make the sauce by melting the butter in a 1-quart saucepan.
Using a wire whisk, stir in the flour and 1 teaspoon of salt,
stirring and cooking over medium heat until it bubbles and the flour
turns pale brown, about 3 minutes.
