SWEET POTATO CASSEROLE WITH PRALINE TOPPING
Serves 12
5 pounds sweet potatoes or yams, cooked and peeled
3 eggs
2/3 cup brown sugar
2/3 cup melted butter
1/3 cup cream
1 teaspoon vanilla
1 teaspoon nutmeg
1 teaspoon cinnamon
Praline Topping:
1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup butter, cut into small pieces
1. Preheat the oven to 350 degrees. Lightly grease a shallow 2-
quart casserole. Mash the cooked sweet potatoes. You should have
about 6 cups.
