Warm Goat Cheese in Phyllo
Serves 6
12 sheets phyllo dough, defrosted
6 tablespoons unsalted butter, melted
2 to 3 tablespoons plain dry bread crumbs
3 fresh goat cheese discs
Baby salad greens
2 tablespoons Champagne vinegar
1 teaspoon Dijon mustard
1/2 teaspoon minced garlic
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup good olive oil
1. Preheat oven to 375 degrees. Unroll the phyllo dough on a flat
surface and cover them with a slightly damp cloth. Working quickly
so the dough doesn't dry out, place one sheet of phyllo on a board.
Brush lightly with melted butter, and sprinkly lightly with bread
crumbs.
