The traditional duo of red meat with hearty red wines proves
especially delicious and dependable when January's wintery blasts
and icy snows exert dominion. But for a change of pace, combining
caramelized shallots and shiitake mushrooms with rustic red wines
provides another robust and flavorful pairing.
For example, topping a homemade pizza with the savory, yet sweet
shallots and shiitakes and a blend of flavorful cheeses delivers a
terrific cold-weather meal. To begin, the most authentic approach
might include making the pizza dough from scratch, but convenient,
store-bought fresh pizza shells work well, too.
