Chicken Piri-Piri

This is the most, and perhaps only, famous dish to come out of
Mozambique. Chicken piri-piri should and must be quite hot, but it
does not have to be unbearably hot.
In general, the amount of piri-piri that is used before grilling
will determine flavor; most of it will fall into the coals or the
grill pan and create smoke that will lend a nice, smoky taste to the
meat. The amount put on afterward will give it the last extra punch
and determine the level of spicy heat.
Butterflying the chicken promotes even grilling, which can be
difficult to achieve with a whole bird.
This is a dish best cooked on an outdoor grill; directions for
