This is a wonderful dish for a St. Patrick's Day dinner. Corned
beef is brisket, or sometimes round, cured in seasoned brine. When
buying corned beef, be sure to ask your butcher for corned beef
cured without nitrates, which are reputed to be carcinogenic.
Refrigerating the cooked corned beef overnight and removing the fat
are essential steps in this recipe in order to have a lighter corned
beef and cabbage. I have based this revision on my grandmother's
recipe, which included potatoes, carrots and celery as well as
cabbage. I like it better because it provides a complete one-dish
meal. However, for faster preparation you can omit them. Gluten-
