IT WAS AT a celebration lunch in the newly renovated The Restaurant at Wente in Livermore that I first encountered this pairing -- in a somewhat different form. Executive chef Arthur Wall served our group this very salad, but with the blue cheese in the form of a souffle rather than in crumbles.
