In the Languedoc region of southern France, even the local wild
boar are connoisseurs of fine wine. They have a nose for quality,
and will gorge themselves on the sweetest grapes and root out the
vine stock.
Boars outnumber people in this part of France, but the locals
take their revenge in wild boar casserole and saucisson.
A profile of a wild boar head sits proudly on every bottle from
Mont Tauch wine which has been produced here for centuries.
Fitou, described as the pride and joy of the region, can be
traced back to the reign of Louis XIV. Today 60 per cent of all
Fitou comes from the Mont Tauch co-operative. They also produce
Corbieres and Vin de Pays.
