I love everything about goat cheese. I love the smooth and creamy
texture of a fresh goat cheese spread onto slices of toasted bread
(crostini), maybe with a little local honey or maple syrup drizzled
over the top. And I love the dry and crumbly texture of an aged goat
cheese, crumbled over a simple yet exquisite salad of organic
arugula, tossed with a lemony vinaigrette.
And, I especially love that goat cheese has a pleasant and
interesting flavor that is both gamy and tart, with about half the
fat, calories and sodium of other cheeses.
It has more protein than most others as well. A little bit adds
so much depth of flavor to a variety of dishes. Stir a little into a
fresh tomato sauce, ...
