Article: Baking in the memories

When Marita Matchitt was a youngster in Hamilton, her grandmother always sent her a birthday package from her Te Kaha home, on the east coast. It came via bus and contained a fresh crayfish, silverbeet, and a delicious homemade madeira cake.

Marita has baked and tasted countless cakes since, but the old- fashioned madeira is still her favourite: "It's the memories," she says, thinking back to those days, describing a big, rich cake made with her grandmother's duck eggs.

Marita's grandmother is now aged 103, and she and others among Marita's forebears have fostered her love of baking, and long career in the kitchen.
