Pasta is one of America's best-loved, most adaptable and
affordable foods, yet most Americans are familiar with only three or
four pasta sauces. There is cream or "Alfredo" sauce; maybe with
spinach or mixed vegetables "primavera;" cooked tomato sauce with or
without meat or possibly mushrooms; and, for gourmets, green basil
pesto. On a rare good day, you might find an oil-based white clam
sauce.
For two years, I was a chef at a traditional Italian restaurant
called Nani's Genuine Pasta House, in Jackson, Wyo. During that
time, I researched, memorized and cooked more than 300 different
