Pasta is one of America's best-loved, most adaptable and affordable foods, yet most Americans are familiar with only three or four pasta sauces. There is cream or "Alfredo" sauce; maybe with spinach or mixed vegetables "primavera;" cooked tomato sauce with or without meat or possibly mushrooms; and, for gourmets, green basil pesto.
