August is National Catfish Month. Catfish is a common and popular fish around these parts, with restaurants serving it up and a festival named after it.

Locally raised or caught catfish is pretty safe to eat, but beware of imported fish.

Many U.S. consumers believe their seafood is subject to the same rigorous inspection standards as those imposed on meat and poultry products. However, that is not the case under the existing Food and Drug Administration standards, despite the domestic catfish industry's continuing effort to change that.
