Look at some of the current dining trends: the mania for seasonal and local foods, the celebration of slow food -- from-scratch cooking using time-honored (and time-consuming) techniques.

So, the timing couldn't have been better for Restaurant Magnus near Capitol Square in Madison to shift in June from the South American-inflected cuisine it had been serving for more than 10 years to the flavors of Scandinavia.
