When it comes to her Swedish Ham Balls, Sharon Mattson of Colorado
Springs says, "No matter how often I make these for my family, they
fight over the leftovers!" A mother of four, three of whom she home-
schools, Sharon adapted her recipe from one for ham loaf.
"One nice thing about this recipe is that it can be adjusted for
people on pork-restricted diets. The texture is softer when using
turkey, but the flavor is almost identical," she says. The texture of
the turkey meatballs can be made firmer by using whole-wheat bread
crumbs.
SWEDISH HAM BALLS
Yield: 6 servings; 36 (1 1/2-inch) meatballs
MEATBALL MIXTURE:
1 pound ground ham (for pork-restricted diets, use 1 pound ground
turkey ham)
