Growing and grinding grain for flour encouraged wandering tribes to settle down. The nutritious loaves allowed them to build cities, develop crafts and produce such monuments to the human spirit as the pyramids, Mozart's sonatas and quick Internet loan consolidation.

Today, bread forms the foundation of our food pyramid. Bread truly is a staff.

But lately it's just getting the shaft.

A gang of low-carb diets have fingered carbohydrates as a sure recipe for a growing waistline.

Now many dieters are cutting out bread entirely.
