How do you make the perfect brownies? Follow these tips from the
experts:
For a glossier, crunchier top, Alice Medrich recommends heating
the chocolate and butter to 150 degrees -- hot enough that you want
to pull your finger out of it pretty quickly -- then immediately add
sugar and eggs that are cold, right out of the refrigerator. Stir
vigorously until the batter cools, thickens and pulls away from the
sides of the bowl.
Another Medrich technique for improving the flavor and texture of
brownies, even those from a packaged mix: Refrigerate the batter for
several hours, or up to two days, before baking. Put the cold batter
