Three years ago Virginia farmer Paul Stephan purchased five water buffalos with high hopes of turning the mop-headed, horned beasts' rich milk into flavorful buffalo mozzarella cheese. But from the get- go his unruly buffalo would not cooperate.

"They didn't want to be restrained or touched, let alone be milked," he said.

All was not lost. Ultimately, Stephan purchased two Jersey cows and successfully became the only cheese maker in the Washington area to make mozzarella cheese, by hand, with milk from his own cows.

But now the offspring of those unruly buffalos have grown ...
