SPICY STARTER
TIGER PRAWNS ON SKEWERS WITH ROSEMARY, GARLIC AND CHILLI
(serves 4)
12 large raw tiger or Madagascan prawns
4 wooden skewers, soaked in water
3 tablespoons extra-virgin olive oil
1 teaspoon of salt
juice of 2 lemons
1 teaspoon freshly grated ginger
2 fresh red chillis (seeded), one finely chopped, one sliced 1
garlic clove, finely chopped
2 sprigs rosemary
80g bag small mixed salad leaves
2 ripe plum tomatoes, skinned, seeded and diced
1 tablespoon freshly chopped flat leaf parsley
1 lemon, cut into wedges to serve
