The great fried chicken hunt is on. I'm on a quest to find the best
fried chicken in the Chicago area. In this column I am listing three
of my favorites. These are places that don't foul up a good fowl,
places that know about and understand fried chicken.
It is pretty well known that there are as
many recipes and methods for doing fried chicken as there are people
who cook it. First, there is the question of the coating. What
should it be: flour, milk, cornmeal, egg batter or bread crumbs?
