While we have no intention of demeaning ancient Rome's achievements
in the areas of philosophy, government and art, we'd like to mention
one noble accomplishment that often is overlooked. Many culinary
historians credit the Romans with the popularization of the
cheesecake - a feat that would assure them a place in any dessert
lover's history book.
Recognition should also be accorded to the group of American
dairymen who invented cream cheese in 1872, a discovery that paved
the way for the development of the light, creamy cheesecakes favored
