In the food world, no family has a more impressive lineage than
the blue cheeses. Austere and distingushed, these intensely flavored
cheeses appeal to the sophisticated palate.
Blues are semisoft to firm cheeses ripened by bacteria from
within. The bacteria break down cellulose in the cheese to produce
the characteristic soft texture and unique piquant flavor.
Depending on the type of cheese, the veins can vary in color
from true blue to greenish-blue. A good-quality blue will have veins
distributed evenly throughout a white or cream-colored interior.
