Chicago music clubs aren't the only place to get the blues in
the Midwest. Local supermarkets and specialty stores are offering a
royal roster of quality blue cheeses produced in the heartland.
MAYTAG BLUE CHEESE made in Newton, Iowa, by Fritz Maytag,
great-grandson of appliance company founder F.L. Maytag, has been
consistently ranked as one of the finest domestic blue cheeses. Made
of unpasteurized Holstein cows' milk, it has a higher moisture
content than other blues. The cheese, which is produced according to
a patented method developed at Iowa State University, is aged from
five months to a year in a man-made cave.
