Americans eat a lot of potatoes. In 1984, food trackers came up
with a figure of 130 pounds per person. That's a lot of spuds, any
way you cut or cook them. I tried to find out how all those potatoes
were prepared, but it seems that no one keeps track of that kind of
thing. My guess is that at least half of that 130 pounds of tubers
ended up being eaten as french fries. (There may be a slight plus or
minus factor in that figure because I used my undying affection for
french fries as a yardstick to arrive at ...
