As winter melts into spring in northern North America, the sap
begins to flow in maple country. By March the woods are filled with
the fragrance of smoke and boiling maple sap and the cheerful sounds
of sugaring off parties.
"This time of year we put maple syrup on everything," said Andree
Vary-Kinney, counselor for public affairs in the Quebec Government
Office, at a recent sugaring off party co-sponsored by her office and
the Canadian Club. "I even put it on eggs. We drink the sap, too."
The homesick Quebecois, other Canadians and Americans who
attended the event in Hinsdale overlooked the fact that there was
nary a sugar maple in sight. There was a huge cauldron of boiling
