The flavors and colors of spring come to dinner with this light
and lovely menu. The pale pink of new potato skins plays against the
bright green of asparagus and scallions in a tangy Cheddar cheese
chowder. Be sure to use cream-toned natural Cheddar so the
vegetables aren't muted by orange coloring.
Whole-wheat walnut muffins, warm from the oven, accompany the
meal-in-a-bowl. The muffins are light in texture but offer plenty of
hearty flavor.
For dessert, there's a refreshing strawberry and grape compote
topped with golden pastry cream. The dessert is heated briefly under
the broiler just before serving. The contrast between the cool fruit
and the warm custard is delightful.
