Many people ask if they can use herbs as easily with microwave
cooking as with conventional cooking. The answer is a definite yes.
With microwaving, it's a joy to use both fresh and dried herbs,
because the relatively short cooking time allows them to keep their
distinctive flavors. Many herbs become bitter if cooked too long.
Herbs are divided into two varieties: the mild "accent" herbs
such as parsley, dill and chives, and the stronger "character" herbs,
including oregano, thyme and tarragon.
It's safe to add accent herbs fairly generously to your favorite
entree or vegetable dishes, but with the character herbs you should
follow the rule of thumb of using three times as much fresh ...
