When I think of the jug of wine that goes with a loaf of bread and
"thee," I envision a bottle of ruby red wine, probably a Bordeaux.
But romance aside, red wine's popularity has greatly diminished.
Wine sales in restaurants and stores are overwhelmingly white.
Why the cold shoulder for red wines? There are a few reason and
several misconceptions that are contributing factors, all related to
changing American eating habits.
As Americans pursue foods that offer reduced fat, cholesterol
and calories and are easily digested, chicken and fish have become
popular entree choices that are matched most often with white wine.
