Article: Feta cheese adds a sharp, distinctive flavor to foods

NEW YORK Americans traditionally have favored mild foods with their roots in the cuisines of Western Europe. But Mexican and Cajun foods now are growing in popularity, and hot and spicy foods are featured as never before in expensive restaurants and fast-food establishments.

The trend toward more unusual foods is evident in the case of feta, a tangy cheese with origins in Greece.

A decade ago, it was virtually impossible to find feta cheese anywhere but in ethnic neighborhoods. Today, it is popular even in Wisconsin, heartland of the domestic cheese industry. In fact, the Churny Co. in Weyauwega, Wis., has become the first U.S. company to manufacture feta for national distribution.
