If you want to eat something that's good for you, fish is near
the top of the list. So is broccoli. So are apples.
All three of those healthful foods play starring roles in a
light but filling soup-and-sandwich menu.
Flounder goes into a delicate, lemony soup flavored with chives.
Either fresh or frozen fish can be used in this soup, although fresh
usually tastes better. If using frozen fish, cut the still-frozen
fish into strips and add to the hot soup.
Much of the flounder marketed in this country is labeled as
sole; lemon sole, for instance, is actually winter flounder. Good
fish markets sometimes have genuine European sole such as Dover, but
it's a waste to use such expensive ...
