Article: Goat cheese lightens up

Seriously folks, even if goat cheese weren't the ubiquitous food of 1986, I'd still like it.

It's sharp and slightly tart, with a texture that ranges from creamy to crumbly, depending on the brand, type and age. Goat cheese is for people who like a little pungency to their food.

Unfortunately, goat cheese has surpassed even the kiwifruit as an overused ingredient. There's goat cheese pizza, goat cheese-stuffed pork and goat cheese cheesecake, to name a few (and when McDonald's starts serving goat-cheese burgers, I'll know things have gone too far).

That's why I'm almost embarrassed to suggest goat cheese souffle as a marvelous entree for two.
