Cheese blintzes, thin crepe shells filled with dry, slightly
tart farmer's cheese, are wonderful for breakfast, lunch or dinner.
They are light, yet very nourishing, and because of the small amount
of added sugar, they're sweet enough for dessert as well as the
entree.
The recipe that follows, contributed in response to a reader
request, is an excellent one. Many products are called farmer's
cheese. For this recipe look for a cheese that resembles very dry,
small-curd cottage cheese. If farmer's cheese isn't available, use
pot cheese or dry cottage cheese.
These blintzes are from my mother-in-law, who was an excellent
cook. She gave me this recipe about 50 years ago. It can't be beat ...
