To prepare molds for clear gelatins, rinse them well in cold
water. Another method is to coat the mold with vegetable oil, but we
do not recommend this for clear gelatin, because a blurred surface
results.
After filling an undecorated mold, run a knife through the
mixture to release any air bubbles that might be trapped in it. Then
refrigerate until ready to unmold.
Before starting to make fancy designs in gelatin, have ready
well-drained and chilled foods. Allow about 1 1/4 cups of solids for
each cup of gelatin or aspic. Just as the gelatin thickens to about
the consistency of uncooked egg white, put a small amount in a
