The research chief of NutraSweet Co.'s new research lab in Mount
Prospect is daydreaming about tomorrow's desserts.
"Ice cream, yogurt, candy, cakes, pies and other good stuff,"
said Michael Losee, "will be low in fat, low in calories, healthy and
taste good. You won't have to pay a penalty for eating things that
you like."
NutraSweet researchers are trying to develop an artificial
sweetener that can be used in baking, and a rich-tasting substitute
for fat that would add few or no calories and negligible cholesterol.
NutraSweet Co., a unit of Monsanto Co., is one of the food
industry's strongest competitors in the race to develop guilt-free
