To Remy Taaviri, the cooking of his native Tahiti can be summed
up in the phrase "tamaa maitai," which means enjoy.
It's the invocation that precedes each meal and the philosophy
of the cooks who produce it.
During a visit to Chicago, Taaviri and his friend Celeste
Mancini prepared several Polynesian-style feasts. Mancini, a
Chicagoan who works as a consultant, has visited the islands several
times and developed considerable interest and expertise in the
cooking of the region.
Taaviri and Mancini said the Society Islands - 14 islands
including Tahiti, Raiatea and Moorea - are aptly named. Islanders
love to share food and good times.
