ORCHARD PARK, N.Y. - Buffalo is a beef-loving metropolis, with
an abundance of restaurants, plain and fancy, that serve hardly
anything else. Prime rib or roast beef, goulash or ground round,
thick steaks or sliced-thin shavings: You can have your beef any way
you please in this hale and hungry city whose gastronomic character
seems to reflect the best of both the Midwest and the Northeast.
Steak and prime rib are fine things to eat, but when we go
traveling, it's the uncommon dishes that interest us, such as the
uniquely Buffalonian specialty known as beef on weck.
