Before I get into the dish at hand - baked clams - it is
important, right up front, to look closely at the clam itself.
Clams seem to be the Rodney Dangerfield of the food world. They get
no respect.
The clam certainly doesn't get the same respect as, say, the
shrimp or the oyster, or even the mussel, which is not even as
good-looking as the clam. And look at the respect heaped on the once
lowly (and ugly) squid. Menus are swimming with squid dishes these
days, and squid, or calamari, as the culinary cognoscente ...
