Looking for a little adventure? Try something different from
the usual salmon on the grill.
Offbeat fish to consider grilling include "new" species (such as
Oreo Dory or Antarctic queen) that have made their way to market in
the last couple of years, as well as fish that many Chicago cooks
know only as casual acquaintances (such as shark or mahi-mahi).
All of the following fish have firm textures that make them
wonderful for the grill. The leaner ones should be marinated or

A good way to sample a fish you've never tried is to buy a
small amount, cut it into chunks, marinate it and serve it kebab
