When it came to cheese Americans used to choose theirs by the
color: orange or white. Flavor wasn't much of a consideration as
long as it was mild.
But now, as Americans are eating more complex cheeses, they're
acquiring a taste for blue cheese.
"Americans are discovering that blue cheese can be creamy and
mild, and are becoming interested in them," said Clark Wolf, one of
the organizers of the American Cheese Society and a spokesman for
Bresse Bleu Inc., a French-owned blue cheese company in Waterton,
Wis.
Annual consumption of all cheeses has risen from 17 pounds per
person 10 years ago to more than 23 pounds per person. Blue cheese
