Gloria Niedbala was born with a silver ice cream scoop in her
mouth. Her grandparents ran a sweet shop and ice cream store; her
aunt was a baker, and Niedbala naturally thought life was a bowl of
ice cream.
Now she teaches ice cream classes to a very eager audience at
the Persimmon Tree cookware store, 127 Third St. in west suburban
Geneva.
"I've always been making ice cream," said Niedbala, whose
creations include a rich, ice cream version of apple crisp and a
glorious concoction simply called white chocolate macadamia ice
cream. In one class she taught a recipe for a chocolate sorbet with
coconut-rum sauce.
