What kind of fish do you get in a fish sandwich? That depends
on what part of the country you're in.
In Maine the fish in the sandwich is haddock. In Florida it is
mullet. In New Orleans it is speckled trout. In Texas it is
catfish. And in Washington state it is smoked salmon.
That is what my recent survey found. While the survey was
conducted by phone, it was inspired by eating. My curiosity about
the origin of the makings of the species was aroused when I ate a
fish sandwich at a restaurant in Cape May, N.J., and to my delight
got a whole fried flounder.
It is not often you get a whole fish as an entree, let alone as
the middle of a fish sandwich.
