Back when every restaurant had Friday fish dinners and you could
stuff yourself for less than $2, the restaurant in the Palmer House
Hotel was known for its lavish fillet of sole meal.
What people best remember is the tartar sauce - tangy, tart and
rich. When readers were asked if they had the recipe, two versions,
both originating from the hotel, emerged. Take your pick.
In answer to Donna Ruder's request for the Palmer House tartar
sauce, I have the recipe, given to me by the chef.
I too, had this delicious fillet of sole luncheon at the Palmer
House almost every Friday. As I recall I was served two generous
