Was quiche - the old warhorse of the brunch bunch - put out to
pasture because it was too fattening or too bland? Maybe a bit of
both.
But like throwing out the baby with the bath water, discarding
the quiche concept outright is ill advised. With the help of the
humble mushroom, both quiche negatives can become positively charged.
In the following recipe for not-quite-quiche, lots of button
mushrooms provide low-calorie bulk so not as much high-calorie
egg-custard base is needed. Instead of a custard pie flecked with
mushrooms, this is a mushroom pie lightly bound by custard.
Reconstituted wild dried mushrooms enhance the dish with a deep
