Article: Lemon curd cupcakes are tops

When I was a child my neighborhood bakery specialized in luscious, lemon-filled cupcakes.

The cupcake part wasn't special - just a yellow cake batter - but the filling was marvelous. The cupcake was hollowed out and packed with lemon curd. The whole thing was dusted with confectioners' sugar. It looked regal.

There's no real trick to this sweet: just a good cupcake and a lemon filling that's rich, tart and sweet. I can immodestly announce that the following recipe fits the criteria.

You can take shortcuts by buying the cupcakes and a jar of lemon curd and just assembling the two, but since neither part of the recipe is difficult, I recommend trying it.
