Recently Swap Shop reader Steve Zajac wanted to know where he
could buy "Russian black caraway seeds." I received several
responses listing grocery stores, but Doris Taub offered such a
complete explanation of this ingredient, I wanted to pass her
information along:
"I assume that Steve Zajac is referring to nigella seeds.
(Black caraway is in fact the literal translation of the German
Schwarzkummel, but the seed is not related to caraway; another
common name is black onion seed.) These are very small, pungent black
seeds that are used by Eastern European bakers to flavor and decorate
bread. One European name for them is chernishkas.
