French silk pie is a recipe that cooks have been making
successfully for years. It's as rich as they come. Butter, sugar,
chocolate and raw eggs are beaten together until they form thick,
high, glossy peaks. The froth is piled into a pie crust and chilled.
However, the eggs in the recipe are never cooked, and while
that might have been safe at one time, health officials now are
expressing concern that raw eggs might be contaminated with
salmonella. Unfortunately, there's often no way to tell from looking
at the shell.
If you're cautious and don't eat any raw-egg dishes, you'll
want to skip this recipe; if you decide to make it, use fresh,
unblemished, clean eggs and keep the dish ...
