If I were to evaluate popularity by the number of recipe
responses sent in to Swap Shop, graham cracker cake definitely is a
reader favorite. But unlike other cake classics for which there is
one basic recipe, the variations on graham cracker cake are endless.
It can be made as a sheet cake, in a fluted tube pan, as a layer cake
or as a torte. Some cooks serve it plain; others doll it up with
custard fillings or nuts and coconut.
The cake has the sweet-spicy molasses taste of the graham
crackers and the traditional lightness of standard cakes. However,
because the recipes use little to no flour, the cake is delicate. It
should be handled with care - that is until everyone lunges for it.
