There are caraway seeds and then there are Russian black caraway
seeds, which also are called chernuska seeds. Most people are
familiar with the "eyebrow"-shaped regular caraway seeds that give
rye bread its flavor. Russian black caraway seeds have a more
pronounced aroma and stronger aniselike flavor. They are used
for earthy pumpernickel breads, among other things.
To answer reader Steve Zajac's query about where they can be
found, several suggestions were sent in:
Parama, 2534 W. 69th St. (737-3332), was recommended by Ruth
Waisneras.
Sliz Delicatessen, 6743 W. Archer (229-1138), and 3116 W. 43rd
St. (523-9533), was named by Jean Kolessar.
