In his cookbook Primi Piatti, Christopher Styler describes working in a restaurant kitchen in Italy when the first shipment of white truffles came in: "I can still remember smelling those truffles from clear across the kitchen, over the smells of turbot grilling, wild boar roasting and dandelion greens sauteeing."

The diners at a luncheon hosted last week by the Italian Trade Commission and a delegation from Italy's Umbria region knew exactly what he meant. There were truffles in everything but the cookies, and it wasn't long before the air reeked of the unique perfume of tartufo bianco.
