One of my good friends just came back from spending four days at
a spa. When I saw her, all she could talk about was how spectacular
the food (all low in calories, fat and salt) had been. The chef
apparently had worked miracles with simple ingredients, creating
dishes that were both striking and delicious. As a result, my friend
resolved to try to cook lightly and to eat the types of dishes at
home the spa chef had prepared.
This threw me into a slight tailspin because I was planning a
dinner party to which she and her husband would be invited. I found
myself rethinking the menu, racking my brain for lighter recipes.
